EASY CHOCOLATE VEGAN DESSERTS


I have always been a big fan of baking, especially anything that involves chocolate, so when I decided to go vegan I knew I would have to try a lot of new recipes. I've been vegan for just over a year now and many, many recipes later I've finally found the perfect recipes for my three favourite desserts. Brownie's, cookies and chocolate fondant's were desserts that I used to make a lot (maybe too much) before I was vegan, so I definitely wasn't going to miss out on them now.

The first recipe I discovered was the chocolate fondant, arguably my absolute favourite. This is definitely the easiest recipe, so easy that there isn't really a method to follow. Just throw everything into a bowl and separate the mixture into pots. Bake at 180 °C for around 15-20 minutes or until the top starts to crack.
SERVES 2
1 CUP DARK CHOCOLATE (melted)
3/4 CUP COCONUT CREAM (or milk)
3/4 CUP SELF RAISING FLOUR
1 CUP SUGAR
The cookies are definitely some of my favourite cookies I've ever had. They're perfectly gooey on the inside but crisp on the outside. The recipe is a little more complex than the fondant recipe but they are still very easy to make. The first step is to make a flax egg by mixing the flax powder and almond milk. This should come together to make quite a thick consistency and then all remaining ingredients can be added. Roll around a handful each of the mixture into balls and flatten onto a lined tray. Bake for 15-20 minutes at 180 °C.
MAKES 6-8
1/2 TBSP FLAXSEED POWDER
1/4 CUP ALMOND MILK
1/3 CUP COCOA POWDER
1 CUP FLOUR
1/2 TSP BAKING POWDER
1 CUP SUGAR
1/3 CUP VEGETABLE OIL

Brownies have always been the one dessert that people request from me all the time. I've found a few really good vegan brownie recipes but none that really rival the brownies I used to make. That's until I found this recipe. The first step is to mix 1/4 cup flour with the water, over a low heat, to create a glue-like mixture, this is what makes the brownies so 'fudgey'. Mix in the rest of the ingredients and bake in a tin at 180 °C for 25-30 minutes.
MAKES 4 -6
1 CUP FLOUR
1/2 CUP WATER
1 CUP SUGAR
1/3 CUP COCOA POWDER
1/4 CUP VEGETABLE OIL
1/4 TSP BAKING POWDER
