I would probably say that most of my recipes are aimed at 'lazy bakers', which is something that definitely applies to me. These 'no bake' recipes are definitely the laziest of my recipes and that's why I love them! They all have 4 ingredients or less and still taste amazing (if I do say so myself).
The first recipe is mini chocolate cheesecakes. I have made a lot of cheesecake since I went vegan and they never quite turn out how they should, until I tried these. The base is made up of crushed vegan digestive biscuits (or any other biscuits you fancy) mixed with melted vegan butter. Pack this into some cupcake cases and leave it in the fridge to let the butter set slightly. The 'cheesecake' mixture is just as simple, all you need is melted dark chocolate and warmed coconut milk. Mix these together, I find an electric whisk works best, and pour the mixture over the biscuit base. Refrigerate them for at least an hour and you're good to go!
SERVES 10-12
250g Dark Chocolate
100ml Coconut Milk
150g Digestive Biscuits
60g Melted butter
The next recipe, which is dangerously addictive, is peanut butter rice krispie squares. This only has 3 main ingredients and is probably the quickest of these recipes to make. Start by melting together peanut butter and golden syrup (you can use any syrup you have to hand) and mix this in with the vegan rice krispies. Once it's all combined, transfer it to some kind of dish and leave it in the fridge for about an hour. I like to add chocolate to the top, but it still tastes great without.
SERVES 8-10
1/2 Cup Peanut Butter
1/2 Cup Golden Syrup
3 Cups Vegan Rice Krispies
Dark Chocolate (optional)
The final recipe is one that you can customise however you like. It's very similar to a peanut butter cup, but using a different filling. The first step is to fill some cupcake cases about 1/4 of the way with dark chocolate and set these in the fridge for about half an hour. Once the first layer is set you can add any kind of spread you like, I used the Lotus Biscoff Spread (which is just biscuit in spread form). Cover the spread with some more dark chocolate and leave these to set in the fridge for about an hour.
