I've been following Zoella for years and I've always enjoyed trying out her recipes, even now that I'm vegan. I generally find that it's really easy to 'veganize' the recipes and they always taste amazing, so I had to try some of Zoe's Christmas treats.
The first recipe that I just had to try was the gingerbread truffles. Ginger and white chocolate are one of my favourite flavour combinations so this is the absolute perfect recipe for me. Some of the ingredients might be a little tricky to get hold of, but it is definitely worth it!

The first step is to blend a packet of ginger biscuits to fine crumbs, these are quite often accidentally vegan anyway. I used a 'cream cheese' frosting mixture (violife cream cheese with icing sugar) to bind the biscuit crumbs. If you can't find a vegan cream cheese, ordinary frosting will work just as well. Roll the mixture into balls, coat with white chocolate (or whatever chocolate you can find) and decorate however you want.
MAKES 15-20 TRUFFLES
1 Pack Ginger Biscuits
4 Heaped TBSP 'Cream Cheese' Frosting
1-2 Bars White Chocolate
1 Bar Dark or Milk Chocolate
180g Marshmallows
100g Rice Krispies
200g Milk or Dark Chocolate
Frosting
Holly & Berry Sprinkles

The next recipe I had my eye on was the rice krispie puddings. I was definitely most drawn in by the way these look, they're just so cute!
Start by melting vegan butter together with dark or milk chocolate and vegan marshmallows. I always get my marshmallows from Holland and Barrett, which is a store here in the UK, but you should be able to find them online as well. Once these ingredients are combined, add the vegan rice krispies, these are a little tricky to find but if you live in the UK you can find them in Tesco. Roll the mixture into balls and add icing and sprinkles to complete the look.
MAKES 14-18 PUDDINGS
1/4 Cup Butter180g Marshmallows

These are definitely two of my favourite festive recipes I've tried this year, and they've gone down really well with friends and family (none of whom are vegan!).
