WHAT I EAT IN A DAY AS A VEGAN

It feels so good to be eating properly again after indulging, more than I should have, over Christmas. Don't get me wrong, I do love that Christmas can be used as a bit of an excuse to eat exactly how you want, but my body wasn't too grateful for it. 

My first meal of the day was a chocolate smoothie bowl. This is one of the quickest and easiest ways to get a really good amount of protein. I start by throwing one and a half medium banana's into a blender along with about 2 cups of almond milk. I then add one scoop of chocolate protein powder, 2 tablespoons of cacao powder and two tablespoons of chia seeds (soaked in water). You can top the smoothie with whatever you like but I used the leftover banana, an extra sprinkle of chia and some oats.
My lunch was just as simple and requires very little effort. I baked a sweet potato for around half an hour until the inside was soft and the skin was slightly crispy. Once it was ready I served it with a mixed leaf salad, dressed with a lemon and herb dressing, and added some baked beans. 

For dinner I had 'chicken' style burrito's which is definitely one of my favourite meals. I start by frying pepper, onion and sweetcorn and at the same time I boil the rice, I use wholegrain. Once the veg and rice have both softened, I mash about half an avocado onto two tortilla's and add a small amount of rice to each. On top of the rice I pile the veg, a little vegan quorn and then add salsa to top it off. I roll the tortilla's into burrito's (not one of my talents) and heat them in the same pan I used for the veg. This is another really high protein meal, and it shouldn't take more than 30 minutes to make.

I was craving something sweet after my dinner so I had a few (more than I'm willing to admit) chocolate truffles that I had made the day before. I will be including these in a recipe video pretty soon, so keep an eye out!
