EASY NO BAKE VEGAN DESSERTS


I am normally the kind of person that loves to bake but some days I am way too lazy to even think about it. This doesn't change the fact that I have a major sweet tooth and love my desserts so I have a few super easy 'no bake' dessert recipes for my lazy days. These recipes are really quick to make and they don't need any precise measurements, you can pretty much guess the quantities and they'll still taste amazing! 

The first of the three is rocky road, an all time favourite of mine. The basic recipe only has 3 ingredients, but you can also add dried fruit and nuts if you fancy. All you'll need are some vegan biscuits (store bought or homemade it doesn't matter!), some vegan marshmallows and some vegan chocolate. I melted two large bars of dark chocolate with a couple of handfuls of marshmallows and a couple of handfuls of crushed biscuits, but it is entirely up to you how much of each ingredient you use. Once this is all combined, leave it in the fridge for a couple of hours, slice it into bars and then you're good to go!
MAKES 6-8 BARS
2 Large Chocolate Bars
1 Cup Marshmallows
1 Cup Biscuits

The second recipe, which is probably my favourite, is chocolate mousse. The measurements need to be a little more precise with this one, but only to a certain extent. All you have to do is throw some melted chocolate, silken tofu and maple syrup into a blender and blend until smooth. It will probably need to be chilled for about an hour or so, but then it is ready to serve. This is quite a high protein dessert, thanks to the tofu, so if you're looking for some extra protein in your diet this is a pretty delicious way to get it! 
SERVES 4
1 Large Chocolate Bar (around 180g)
2 Packets of Silken Tofu (around 700g)
150ml Maple Syrup

The final recipe always goes down pretty well; cookie dough bites. When I bake I quite often eat a lot of my uncooked batter or uncooked dough before it even reaches the oven, so this is the perfect recipe for me. The first step is to melt some vegan butter with peanut butter, sugar and almond milk. Once this is cool you can gradually start to add the flour and any other ingredients you want to include, I like to use chocolate chunks. I find that little balls are the easiest way to serve them but that is completely up to you!
MAKES 10-12 BALLS
1/2 Cup Vegan Butter
3 TBSP Peanut Butter
3/4 Cup Sugar
Splash of Almond Milk
2 & 1/2 Cups Plain Flour
1/2 Cup Chocolate Chunks
