There are so many delicious vegan snacks that require very little time and effort. These are some of my favourite's, both sweet and savoury, that I make on a regular basis.
The first recipe, which is one of my all time favourite's, is peanut butter flapjack. This is something I used to make all the time before I went vegan and it always goes down very well with friends and family. The first step is to melt together the vegan butter, sugar, golden syrup and peanut butter. Add this mixture to the oats, mix until combined, and transfer to a baking dish. It should take around 20-30 minutes to bake, at 190°C. You can add any extra toppings, I just added a little dark chocolate.

The next snack is definitely one of the easiest that I make; roasted chickpeas. If I ever crave crisps or chips, roasted chickpeas are my go to 'healthier' alternative. It's completely under your control how healthy you make them, depending on how much oil you add, but they'll nearly always be healthier than store bought crisps. All you'll need is a can of chickpeas (drained & patted dry), a splash of oil and the seasoning of your choice, I used paprika. They should crisp up after about 30 minutes in the oven at 200°C but they will become chewy as they cool down so make sure you eat them hot!
SERVES 2
1 Can Chickpeas
1 TBSP Olive Oil

The third snack, chocolate dates, have been a fairly new recipe for me, but they have very quickly become a solid favourite. This is another one that is very popular with my family, but quite often I've eaten them all before they can get close. Starting with pitted dates, spread peanut butter inside the dates and coat with a good layer of chocolate, I used dark. They should take around an hour or so in the fridge to set but then they're ready to eat!
SERVES 1 IF YOU'RE GREEDY LIKE ME
10 - 12 Pitted Dates
2-3 TBSP Peanut Butter
1/2 Large Bar Chocolate
The final snack is this nacho 'cheese' style dip. I'm always shocked by how much this dip tastes like cheese, it's almost a little off putting! You can have whatever you like with the dip (or you can even use it as a sauce) I just made some tortilla chips by baking some tortilla wraps cut into triangles. The dip is very easy to make, start by adding boiled potatoes and carrots to a blender. Add the water, olive oil, salt, lemon juice and nutritional yeast, blend until smooth and serve!
SERVES 2-3

1/4 Cup Water
2 TBSP Olive Oil
1 TSP Salt
1/2 TBSP Lemon Juice
1/4 Cup Nutritional Yeast
